About 12 years ago in Cape Town, South Africa, the Shuttleworth Foundation (yes, that's Mark Shuttleworth from Canonical/Ubuntu) was installing thin client networks in disadvantaged schools. Initially they used Red Hat, but later on (when Ubuntu started up) a few of the volunteers involved with it worked on Edubuntu to achieve the same effect. It uses the LTSP, and I think it's just a matter of selecting it in the installation.

Might be worth looking into.
