There is a "weasel" device that gives a serial
port in place of your video card (i.e., this
capability is often available on servers, etc.).
But, you would have to purchase one for each
machine  :<

You can run serial consoles on many "non-PC's"
without requiring an OS to be running (i.e., so
you can actually boot *from* that serial
console).

You can use a frame grabber with display on the
laptop *if* you configure the "PC" so that it's
native resolution is within the capture range
of the frame grabber.

If the machines are all "local" to you, you can use
a KVM extender (effectively a long extension cord)
to bring the video *to* a convenient monitor
(instead of the monitor to the video).
