OK,
   You say you don't want to "dismantle the user-friendly
veneer, just to get to the guts." I assume that by "guts" you mean the
kernel. That's easy. Just about every distro shows you ways on how to
build your own kernel.
   I've done it for Debian. Although  Debian l will automatically
install a kernel with all the bells & whistles, there is web
documentation on building a custom kernel under Debian.
