What you're talking about is maintaining a mixed
stable/testing|unstable system. Best way to do this is to use
apt-get's -t switch. Take a look at Section 3.8 of the Apt-HOWTO:
http://www.debian.org/doc/manuals/apt-howto/ch-apt-get.en.html#s-default-version.
You'll also want to review apt's pinning feature, but it sounds like
you might want to wait for that until you're a little more comfortable
with apt.
