My favorite:
Celestia - Full blown OpenGL astronomy package & space simulator. You havent even _begun_ to feel like a God until you've destroyed the moon, created a giant fiery helll-planet in its place, named it after yourself, built the terrain yourself, added a cloud layer, and put it in orbit where the moon used to be. Watch the Martian sunrise, or hang out in orbit around Saturn looking back to earth. Travel at the speed of light, in realtime...Tons of fun stuff. Go from focusing in on a single garbage-can sized rock orbiting earth to zooming out half a billion lightyears away, in about 10 seconds.
Runs in a window in X, or full screen. Also has a Windows port. :)
